The blood orange is not just any citrus. The dramatic red flesh comes from anthocyanins triggered by the sharp temperature swings between Sicilian days and nights — a phenomenon almost exclusive to the volcanic slopes around Etna. Our marmalade is made in small batches during the brief winter harvest, when the fruit is at its most intensely flavored. Nothing added, nothing removed. Just fruit, sugar, and time.
