TRADITION
Sicily has been at the center of Mediterranean tuna fishing since the Phoenicians. The traditional mattanza — a centuries-old method of catching bluefin tuna, recognized by UNESCO as intangible cultural heritage — defined entire coastal communities here. That deep respect for the sea and its rhythms still runs through every producer we work with. This is the same prized Thunnus thynnus sought by sushi chefs worldwide — the bluefin that commands top dollar at the finest omakase counters — but here it is preserved the traditional Sicilian way. Our tuna is line-caught during the spring and summer season, hand-packed into tins, and covered in Sicilian extra virgin olive oil. No shortcuts. Just exceptional bluefin preserved the way it has been done here for generations.
